Nikkei cuisine originates from the Japanese who migrated to Peru about a century ago. Nikkei combines the delicate techniques of Japanese cooking with the bold, intense, and distinctive flavors of South America. Nikkei moves freely between the two cuisines and geographies with global latitude, bringing together an unprecedented range of flavors, textures, and styles. At Lía Playa, this creative cuisine method will show great respect for ingredients, but will not be limited by tradition.

From Mediterranean to Peruvian and Ayurvedic, PLANT covers a multiple cuisine style and gastronomy philosophy of eating.
Nutrition plays a central role in Ayurvedic living. Ayurveda places special emphasis on “Ahara” (diet) and “Anna” (food) as a means to good life, health and wellness. Healthy and wholesome food nourishes and connect the mind, body and soul.
With this in mind, PLANT AYUR concept carefully combines the harmony of the whole Spaces (Design) with Plant-Based Ayurveda-theme Restaurant & Apotecary. PLANT AYUR culinary concept is based on: Three Doshas principal (Pita – Kapha – Vata) as well as food qualities such as Taste (Rasa), active component or potency (Virya), post-digestive effect (Vipak) and pharmacological effect (Prabhav).
Six Tastes also plays a major role in the refinement of PLANT AYUR concept where classification of food and food group are developed according to taste such as sweet, sour, salty, pungent, bitter and astringent.
These Six Tastes also correspond to the Six Stages of the Digestive Process & Organs and the stimulation of the immune system.
Role of Spices is also a key’s factor in PLANT AYUR menu planning where bring balance into food.

Ayurvedic Principles are blended into Yoga practice especially supporting clients who looking at cleansing, fasting and or rebalancing their physical and energetic systems.
